Parsnip Bhajis – vegan and gf – makes 20 canape size.

Ingredients:

2 x parsnips- grated
2 x red onions – finely sliced
½ tsp ground cumin, ground coriander, ground turmeric, garam masala, ground ginger, chilli flakes
Small bunch fresh coriander
Gram four – enough to bind the mix together
1 garlic clove – crushed
1 lemon- grated
Salt and pepper
Directions:
Boil the parsnips and red onion for 1 hour – drain and keep the liquid!
Add the other ingredients together and mix . Season to taste. Add enough gram flour to bind the liquid from the vegetables.
Roll into balls.
Deep fry at 180°c – make sure to test one, if they fall apart, add more gram flour.
Fry until golden brown and enjoy!
(You could also shallow fry too, if you prefer and shape into patties instead. you could also make them bigger and have as a starter)
